Is bread good for our health?

From an Italian research carried out by the Research Council in Agriculture and the Analysis of Agricultural Economics, published in the Journal of Cereal Science, it is clear that bread and in particular, the crust is responsible for the aging of our body cells. The real problem seems to be the baking of bread during which the so-called “Maillard reaction” takes place, where once the temperature of 140 ° is exceeded, it generates chemical reactions that develop toxins responsible for the aging of our body. The study also confirms the theory that burnt parts of bread can be carcinogenic.

What are the ingredients of bread?

The ingredients of the bread are water, flour, salt, and yeast. They can be added to the dough: fat, extra virgin olive oil, or various kinds of margarine.

What is the sourdough?

The sourdough is a “live” yeast, a dough composed of water and wheat flour that is left to ferment naturally. This yeast is also defined as natural yeast. Once generated, the sourdough can be used many times for the next dough, thus becoming inexhaustible. Unlike brewer’s yeast, everything that is prepared with sourdough turns out to have a better taste, to be much more digestible and lasts longer.
