TAKE AWAY AND FOOD DELIVERY: A REAL BOOM IN SALES

After a slow start, food delivery and takeaway have literally exploded. Let's see the numbers and rules of the Istituto Superiore di Sanità (National Institute of Health).

We have already talked about it in the previous weeks: food delivery (or home deliveries, if you like) would have been the most effective way to restart, with the takeaway. So it was. Clients, who have used it during the lockdown to exit the Coronavirus crisis, are continuing to use it thanks to the simplicity of some systems, such as the one proposed by foodiestrip (for info, contact us on [email protected] or write to us privately on Facebook).

The numbers of home deliveries

Not just pizzas and hamburgers: Italians during quarantine and during this Phase 2 have ordered everything, even beers, wine, and cocktails. The growth figures are exceptional:

1. 34% of people surveyed said they ordered for the first time during the most difficult phase of Covid and continue to do so;

2. 90% of the interviewees consider food delivery important or fundamental;

3. Almost 60% of the Italians interviewed reveal that they are ordering food at home, while those who do not use it, say they are often at home prefer to cook;

4. Sweets and ice cream saw a sales growth of 133%;

5. The sale of sushi has grown by 124% while the pokè bowl has registered a + 54%;

6. More men than women order (60% vs. 56%), and they do it mainly (59%) to spoil themselves a bit (the same reason, among other things, for which you choose to go to a club). 48% of them, however, order online because it is more convenient. Finally, for those in smart working, it is practical to order without having time to cook (15%).

The data about safety measures

Concerning safety, 65% of respondents consider it essential that the rider wears a mask and gloves (especially for women, 53%), and ‘contactless’ delivery is required by 60% of customers. 57% said they preferred electronic payment, while tightly sealed food bags are 47% critical. As you can see, they are important figures, the Italians care about security but are not overly frightened.

The rules to follow for food delivery and takeaway

One of the reasons home deliveries and takeaways are driving the recovery is the few rules to follow if compared to those of Fipe or Inail for physical premises.

Here, then, are the rules to be followed based on the decisions of the Istituto Superiore della Sanità.

Take away organization

Define an area intended for the collection of food prepared and ready for delivery to customers. These areas must be different from the food preparation rooms.

Guarantee the availability of sanitizing products to customers at the time of delivery.

Prepared foods must be placed in suitable containers for protected foods and separated from other goods.

The delivery of food products to customers should take place respecting the physical distance of not less than one meter, possibly adopting innovative solutions (e.g., sliding/rotating trays, dedicated support surface, from which the customer will pick up the products only when the restaurant owner or his employee will have walked away). In the inability to maintain this distance, both the manager and the customer must wear the mask.

Encourage the use of payment methods that avoid the exchange of money, especially contactless.

Organization of home delivery activities

Define an area intended for the collection of food prepared and ready for delivery by delivery personnel. These areas must be different from the food preparation rooms.

Ensure the availability of sanitizing products to all home delivery personnel.

All staff involved in the delivery of food products should maintain a high level of personal hygiene, wearing the mask during both collection and delivery, sanitizing the hands before putting on the gloves, and changing the gloves at each delivery.

Prepared foods must be placed in suitable food containers, protected, and separated from other goods. The containers used for the transport of food must be cleaned and disinfected after each use, to ensure that food safety requirements are maintained.

The collection of food products at the shop and delivery to customers must take place respecting the interpersonal distance of not less than one meter and avoiding access to the customer’s home.

Concerning home delivery, particular attention must be paid to the correct storage conditions (time/temperature) of the food to be delivered.

Encourage the use of payment methods that avoid the exchange of money, especially contactless.

Indications for customers

It is preferable to order online or by telephone to avoid gatherings outside and to ensure that the collection of the ordered products takes place at a time agreed with the operator.

Inside the premises, customers have to wear respiratory protective devices; however, maintaining the safety distance of at least one meter.

Upon collection of the goods, customers will be able to enter the business when other customers do not already occupy the area intended for the pick-up of prepared and ready-to-deliver foods.

Customers should remain inside the restaurant the time strictly necessary to collect and pay for the goods.

All forms of consumption on the spot are prohibited.

In the case of home delivery, when picking up food products, wear respiratory protective devices, and respect the safety distance, which must not be less than one meter.
